I notice he at least seemed to cut off the bottoms of many green roots. As a newby I am wondering why?

I do the same too on larger plants. Long roots will rot in new potting media (change of PH) if you don't trim them. I cut anything longer than 7-10 inches. Trim roots seem to encourage plant to grow new roots once repotted.

If you use an inorganic media (i.e. alifor for semi-hydro, or perlite, charcoal, peat moss) you can probably just add more new media into a larger pot.

Friendly reminder that use damp moss not wet. Once repotted don't water it for a week or two. Give the repotted plant time to heal from cut roots and time to initiate new roots. You can mist top layer of moss to keep up he humidity.
